One Pot/Pan Cookbook

Howdy. Not sure if this is under the correct tab

Any recommendations for a one pot/one pan cookbook? Not really looking for one with a gazillion recipes. More focused on handfuls of some interesting recipes. Would be a gift for somebody who lives out in the boonies, but gets into the city often enough to get ethnic ingredients

Out of the 120-ish recipes in David Tanis's "Heart of the Artichoke" (ISBN 978-1-57965-407-8), a fair number meet the one- or two-pot criterion. The recipes are organized around menus, which are mostly Italian and French, with some "American", eastern Mediterranean, southeast Asian, and Mexican thrown in. The menus are, in turn, grouped by season. Not sure if the dishes will cross your (or your friend's) threshold for interestingness, but maybe you can check a copy out from your local library to see.
