1/25/2013 Battle Beef

This week’s theme is Akaushi beef from Kumamoto Prefecture and it’s famous for tender and tasty red meat.
Nominee is a French chef from Karuizawa (the famous summer resort town hours from Tokyo) luxury resort and he is the contestant for coming 2013 Bocuse d'Or.

I liked Iron Chef Wakiya’s 4th dish, Salt roast of Sirloin in Daikon cup and nominee’s 4th and 5th dishes, Meringue covered Hamburg and Fillet a la Rossini Mont Blanc style. But overall, I would say dessert style Rossini was the most unique and marvelous one.

2/15/2013 Battle Cabbage (Green, Red, Savoy, Brussels Sprouts)

This week, former Iron Chef challenger, Italian chef Hiromi Yamada, who won cabbage battle to Iron Chef Chen in 1994 comes back to Kitchen Stadium.
He was used to be called “Genius” by people but lost his fame with two time misbehavers – one is a tragic traffic accident and the other is his criminal arrest.
He is 60 yrs. old now and wants to be acclaimed again.
As I got curious how chef Yamada’s dishes were when in his prime, I watched old Iron Chef Cabbage battle.
Just by looking at them, I believe, they can be regarded as today’s premier dishes.
Well, I must concur. He is genius. These are his dishes of 1994.
1. Bagna Càuda of Cabbage Anchovy flavor
2. Soba (buckwheat) pasta with Cabbage & Truffle flavor, Clam Bouillon sauce
3. Steamed Tilefish & steamed Cabbage, Celery root, Caviar, Tomato, Balsamic vinegar
4. Grilled Foie Gras & Scallops wrapped in Cabbage, Charred Saffron risotto


Cabbage is rather boring theme and this week’s dishes were less grand than usual. The best dishes were two soups by both chefs. Also, I liked the idea of Cutlet of Mille-feuille of Cabbage by Iron Chef Wakiya.

They played long human drama this week and not enough cooking scenes. Well it’s really hard to guess all ingredients with the limited source. And many viewers (including me) thought either producers influenced the result or Judges didn’t give fair judgment (consciously or unconsciously).

The next program is on 2/22, yes, next week!

2/22/2013 Battle Scallop (fresh & dried)

Nominee is the owner chef of the ultimate gourmet RAMEN restaurant which changes its ramen menu frequently (he says there are more than 500 kinds of ramen so far). Also, there are other menus besides ramen and it offers tasting course menu too. It is very small place and counter seating only and reservation only. Think as Izakaya Bar which serves ramen.

Although I anticipated what this Ramen chef vs Robuchon French chef would be, it was very high level and fun battle. Dishes are all gorgeous and looked yummy. I liked both chefs’ dishes a lot – they were two different kinds of greatness.

Nominee Irie 82 points

Although Iron Chef Suga won by 8 points this week, I felt both chefs’ dishes were equal in level.

Next week, 3/1, is a dessert battle. Very interesting!

3/1 Battle Strawberry (Tochiotome, Momoichigo, Hatsukoi-No-Kaori)

First dessert battle featuring Strawberry. They are Tochiotome – the famous organic premier brand, Momoichigo – the beautifully shaped plumpy flesh brand and Hatsukoi-No-Kaori – the unique white color brand.

Nominee is the famous pastry chef Toshihiko Yoroizuka. Tough battle for Iron Chef Suga who have to make desserts with strawberry (at least kind of a half savory, a half sweet dish?)
As you may know, Japan has super premium fruits which have unbelievably rich and succulent flesh.
Be careful not to overpower its natural sweetness is the best way to present.

There is so called Dessert Bar trend like this week's nominee chef Yoroizuka’s place.
Think as Sushi Bar, Izakaya Bar or Kappo Bar with sweets version.
