Oh my god, this is fabulous. Is that Kaga's grave the new chairman is supposed to be standing over at the beginning?

And Hattori-san returns!!! :-D

I'm going to have to watch all of this later. And man, I wish I hadn't given up on learning Japanese. Anybody heard if there are any plans to broadcast a dubbed or subtitled version in the U.S.? Here's hoping they get the same Canadian VO crew :-)

I must say, the new set is incredibly impressive. I wish that the new Chairman had even half the flair of Chairman Kaga (but honestly, half the flair of Chairman Kaga is all we can hope for), and what the hell, no "Allez cuisine!" to start the battle?!

This week, a young Italian chef challenges Iron Chef French.
At the beginning, a famous Italian chef Tsutomu Ochiai talks about Italian cuisine.
“Some media writers refer French chefs with honorifics and call Italian chefs as those guys. That shows what in their minds about Italian cuisine --- casual and everyday foods.”
Interesting --- Iron Chef Japan producers want Italian chefs to be portrayed as underdogs?
There is no Iron Chef Italian and a bunch of Italian chef nominees are coming to challenge Iron Chefs?

I totally marveled at Iron Chef Suga’s dishes this week. He is really gifted, poised and only 35 yrs. old?
He is the one of key operators of chef Joel Robuchon’s global expansion project.

Nominee is son of a small father & son Chinese restaurant. But they don't have Dinner Menu. They show you their proud ingredients of the day and you decide how the dishes are cooked in this gem of the town restaurant.
Iron Chef Suga was fabulous as usual, Nominee chef was not in his prime by pressure and might have defaulted on executions.

Lovely Ms. Asako Kishi is one of the judges. She is as beautiful as before. Can’t believe she is 89 yrs. old!
I liked Nominee’s French dishes too, but it seems that Iron Chef Wakiya is superior on every categories.

This week’s Nominee is a Spanish chef who trained under chef Carme Ruscalleda of 3 Michelin star restaurant Sant Pau near Barcelona. Modern Spanish cuisine is leading the world with techniques and undiscovered unique flavors. I was looking forward to seeing how modern Spanish can prevail in Kitchen Stadium. A little underwhelmed I have to say. For example, with Nominee’s second dish, modern tortilla, I was expecting he would do more than just wrapping frozen potato puree with egg crepe. I wish he pushed a bit more with egg and add other elements too to make it to the deconstructed tortilla dish. To think of Iron Chef settings, Modern Gastronomy is not suited anyway than robust quickfire type cooking.

This week’s ingredient is AWAODORI Jidori from Tokushima prefecture. Its name puns with the local folklore dance (tori/dori means chicken, odori means dance). Farmers say they feed their chickens with seaweed, wild herbs and wood extract liquid. These fowls are pretty much healthier than we, humans, aren’t they?

Nominee is a chef of so called Yoshoku food in Japan. Yoshoku is the western cuisine customized to Japanese tastes and only found in Japan (I believe). Though Nominee’s Jidori hamburg was yummy, Iron Chef Kurogi’s dishes outperformed Nominee’s this week overall.
Deconstructed Oyakodon and Yuzu cup one are very inventive and awesome, his top dishes.

Iron Chef Kurogi 99 points / Winner!
Nominee Kawasaki 89 points

As I predicted, Iron Chef Kurogi won with 99 points. Really? I don’t doubt he is the top skilled Japanese chef, but still did he come up with the menu himself? There is a little creative discrepancy between this week’s brilliant menu and his first menu. Sorry, some rant I have to speak out. I hope this week’s Kurogi will keep coming back.

Will there be the program next week? They have no information.

Mnemosyne... these recaps are amazing. I'm torn between wanting to scrutinize them, and wanting to hold off and wait to see if they're dubbed into English so I can watch them without the surprise being ruined. Has there been word of anybody picking the show up for broadcast in the U.S.?

Sure you can wait to see, Dom, but my guess is it will be at least a few years? until Fuji TV will sell the programs rights to Food Network.
Until then you can just watch the photos and salivate.
One funny thing in this program is the presence of Judge Ms. Setsuko Yuuki, who was the original Iron Chef Food Coordinator.
She is the one wears Kimono and black hair band stuff.
She is so sharp on her criticism you can see all chefs get nervous and intimidated.
But in my opinion all her criticism are true. She just can't help saying all in her mind.
We need one Simon Cowell on the judging panel to be entertained anyway and she seems playing the part well.

12/31/2012 New Year's Eve Special
This is the last battles of 2012 and they did live three battles on the Eve night.

1. Iron Chef Suga vs Thailand Iron Chef Ian Kittichai --- Spiny Lobster Battle

2. Iron Chef Kurogi vs former Iron Chef Michiba --- Buri (Japanese Amberjack) Battle

3. Iron Chef Wakiya vs former Iron Chef and current Iron Chef America Morimoto --- Apple Battle

As they were 45 minutes battles, chefs did three dishes each (except Michiba who did four dishes). Dishes were neither complicated nor exquisite as the regular battles, but their theme was to celebrate the New Year to come, so it was fun enough.

First Battle : Iron Chef Suga’s frozen carpaccio was interesting. I really want to taste this one.
His third dish must be fabulous too using so expensive vintage wine.

Chef Kittichai’s second dish, sous vide lobster in coconut & lobster bisque was the best of his lineup.

Second Battle : Come back of the legendary Iron Chef Michiba who holds the record of 33 wins out of 39 battles. Chef Michiba showed again he knows the ingredient well. It seems His priority is that dishes always tastes best first rather than too much trying to layer flavors and ingredients.
I must say Iron Chef Korogi’s dishes were noble and marvelous too. Just his dishes are of different breed.

Third Battle : Iron Chef Wakiya’s second dish, baked & stewed whole apple with baby pork, was the most theme appropriate dish. Apple was the main figure and a small pork meat and soup were the assist. And his third dish uses 1963 Calvados? This sounds like emperor’s banquet.
With chef Morimoto, apple soba in his first dish and apple juice flavored Unagi chazuke in his second dish were genius and he showed he has his own world of dishes different from other Iron Chefs.

1/18/2013 Battle Cheese (Camembert, Mozzarella, Blue, Cream)

This week’s nominee is a French chef who worked for the prestigious French restaurant in Tokyo and now operates affordable Tapas Bar style French restaurant.
Their dishes are not like you might get at the Café or Bar but the same ones you see at the fine French eateries.
But their prices are like one third or fourth of other full service French restaurants.
Guests can’t seat (yes, there are no chairs, only counters) and there are no pampering wait staff there but the restaurant is so popular there is always waiting line to get in.

Theme was Cheese. I must say Japanese are not very descriptive with cheeses. I wish they don’t call just Cream Cheese or Blue Cheese but refer by the producer or the region where they were made. Like they refer beef, chicken, fish or vegetables by their origin.
Cheeses are from Hokkaido except Camembert, which is from Gifu Prefecture.
