The fat is a feature, not a bug. :) I think the combination of the fat and richness from slow cooking the gelatin out of the stock bones is the main goal of a good tonkotsu broth. Just a heads up, I think our favorite mixologist from Vesper Bar, Rodger Gillespie, is now at the Parlor Lounge at Mirage. Might be worth checking out.

New Mexican Grill is still in my regular rotation. Nothing more to add to previous conversations other than the Chile Relleno is still awesome, especially when you add Carne Asada. I'd still say this is my favorite Carne Asada in town. Also, their Quesadillas are huge.

The Gilbert outpost of Pomo has snuck into our regular rotation. After a few visits, we stumbled onto a pizza that has taken the top spot for us on their menu! Not too far south, just west of the 17, you'll run into a couple of the Food Nerd favorites. Cafe Ga Hyang is the best Korean in town. That's a good question. I have a feeling there was some other meat present as a binder and texture provider, but it definitely had a strong duck flavor. Quite the portion.

I will be there a bit late so that I can make it back to work on time. Feel free to order without me. I recommend the Scallion pastry to soak up the sauces from the meat pies or other dishes. The eggplant, potatoes and peppers is a must, too.
