Re: Suze liqueur

Feels like I'm always seconding Tops and Hi-Time for Bill. Tops usually has the one thing I've been missing that I couldn't find elsewhere. Hi-Times always has all the things I want all the time. With Hi-Times I try to build up a bit of a wishlist because of their shipping. I think it's around 15 bu...

Turkdish

Wondering why I haven't heard more about this place. Not a huge menu but done really really well. The owner is a super nice guy and seems to treat customers like they are guests in his home. While I was there I asked him about tips for grilling Kofte and he was ridiculously helpful. I have been thre...

Re: Peanut-infused bourbon and bittered bourbon peanuts

A brown butter washed peanut butter cocktail sounds amazing. Maybe adding some heat in there too. Think it's time to go pick up some peanuts.

I cook a lot of Tritip. Do a short cook and finish over mesquite.

Re: Colonche (fermented prickly pear booze)

I've always wondered why no one had done a prickly pear distillation. I feel like if ever there were a spirit waiting to be taken advantage of by someone in AZ looking to cash in that would be it. Still kicking around the idea of a small still so maybe one day I'll give it a try.

Re: Limoncello

I still have a full bottle of Limoncello and am a little burnt out - any reason I can't just add milk to the current bottle to make more of a crema which I actually recently figured out I enjoy more? Can't think of any reason not to... Can't see any reason why it shouldn't be fine. I used Danzeisen...

Re: Sous Vide Cookery at Home

No pictures but just finished a 48 hour chuck roast. 136 for 48 hours with just a bit of thyme and rosemary. Finished on a mesquite grill. Pretty sure that is exactly what sous vide was invented for.

Re: Limoncello

Wound up more of a hybrid. But I actually liked it more than any of the cremas I've had. It wasn't quite so thick and I am actually able to drink more than a single shot.

Re: Gadgets for lushes

Agitation is one of the best ways to get clear ice. That is what ice sculptors use on those giant sculptures you find on cruise ships and Bar-Mitzvas from the nineties. I know that the Ice King has the equipment to do large blocks with agitation. I'm really angling for them to do a delivery service ...

Re: Where to purchase hard to find cocktail ingredients?

I don't know. I was surprised by how busy it was, how many staff they had,and the amount and price of the bottles people were walking around with. Then again, if I lived in Gilbert I would drink even more than I do now.

Re: Where to purchase hard to find cocktail ingredients?

Just found the Small Hands selection at Total Wine in Gilbert. Which I just discovered is the magical Total Wine with all kinds of goodness that I can't find at any of the other Total Wines. The even had Jefferson's Ocean with multiple bottles. Del Bac Whiskey has made an appearance as well. Couldn'...

Re: Dry Brine

I did the dry brine and spatchcocked turkey that Kenji recommended this year and it was ridiculous. Both my mother and grandmother who have VERY strong opinions when it comes to tradition and food loved it. Skin was very crispy, and all the meat was moist. I'm lucky enough that my oven can fit a 3/4...

Anyone tried the Orgeat that Cocktail Kingdom sells? Tiki Adam's Toasted Orgeat.

It's out of stock right now but wondering if it's worth picking up once back on their shelves.

So it's time for me to start thinking about Thanksgiving. This is the first year I am doing T-Day at my house and was wondering what everyone thought about heritage birds. Worth the money?
