Re: Sous Vide Everything
Starbucks uses roughly equal parts of egg and (full-fat) cottage cheese. Whiz that in the blender until smooth. Season (salt, pepper, herbs, spices, hot sauce, what have you) to taste; zap a little in the microwave to test seasoning levels. Put desired fillings into small mason jars, and fill almost...

Re: Maine Lobster Lady
It’s hard to say which of the two lobster rolls is the better choice. I think the best way to do it is to bring a friend and split both of them. Her blueberry lemonade is a perfect tangy foil to the rich lobster roll.

Stockyards is all I can come up with, too. House of Tricks nestled in downtown Tempe doesn't qualify as a steakhouse, but it still may fit the bill.

Use it wherever you want a spicy kick with some complexity. Supporting flavors include orange, sesame, and nori (seaweed). When your supply runs out, it's readily available at Asian grocers, and well-stocked regular grocery stores.

Re: Upcoming Vegas Trip - Aria restaurants, Raku...
staying at MGM for this trip, is there any bar worth getting a cocktail at there? ¯\_(ツ)_/¯ MGM pays much more attention to nightclubs than they do to serving a decent drink. Looking for some other places to try, already going to hit up Raku again - nothing looks that appealing at MGM Have you been...

Re: Instant Pot pressure cooker
You are correct; I got one and so far adore it. The slow cooker will likely fall by the wayside in short order here. The Instant Pot does a decent job with white rice (in only 15 minutes start to finish!), but my souped up Zojirushi rice cooker still does a much better job.

I try various artisan olive oils, and I keep coming back to Trader Joe's California Estate olive oil. It's fabulous stuff, and the price can't be beat.

Re: Chili burger
For a Tommy's style chili burger, sadly no. To think, some years ago they were talking about possible Phoenix expansion, which sadly never happened. The first thing that pops to mind as even close is Hopdoddy's Terlingua burger. It will overshoot your mark, but if you customize the toppings some it ...

The bridge, the piano... I see the new owners didn't change a bit of the decor from when it was Shangri-La.

Re: Butcher to find beef cheeks?
My first thought is a Mexican grocery store; Ranch Market is the first I'd try. They used to have whole cow heads right in the butcher case, complete with tongue in a goofy pose out the side of its mouth. But I haven't seen those in the case in a while. Probably because gringos sometimes ran away sc...

Brick Oven Pizza on 40th - Mamma Mia Part II
Great news, Arcadia-ites! The old Mamma Mia space is open once more. In its space is exactly the same Mamma Mia pizza we remember and love. Hardly anything has changed. The menu is identical except for the new logo; the pizza description on the take-out menu still mentions "Mamma Mia's signature San...

Just so you know, Gelatology is the new place for Desyreé Alberganti, the wildly creative original force behind Art of Flavors. My sources tell me Art of Flavors is still good, but not even close to when Desyreé was at the helm.

You can get it at AJ's and Whole Foods. According to Christina Tosi of Momofuku Milk Bar in New York, the conventional, non-organic is the better of the two.

Shake Shack is a New York based quick-service burger chain run by Danny Meyer, proprietor of Union Square Cafe and Gramercy Tavern in New York, among other restaurants. They're known for doing some outstanding burgers, one of the few quick-service places with a fan base as rabid as In-N-Out. They ju...
