They had a chef there that really expanded the Hunan dishes and was really good, then the original owners took it back and it went downhill.
Anyone know where the chef that was expanding the Hunan style dishes went to?
I think that was the 3rd chef during their most recent run.

The one I make - 750g of mascarpone is used
Most restaurants use cream or go light on the mascarpone with the cream to save on cost

They are one of the few places that turns out the same quality of food whether it is RW or otherwise. I have eaten at Atlas on multiple RW and each time has been their standard excellence
