Re: Sashimi sources?

One thing to bear in mind is that “sushi grade” isn’t really a thing. There’s no inspection authority or rules or grading standard or anything like that for fish to be used for sushi and sashimi. But if you’re going to go raw for prep at home, really the best thing you can do is buy from somebody yo...

Re: TX Michelin Stars

I don’t want to get too in the weeds with a lot of TX restaurants I don’t have experience with, but speaking broadly, the problem with Michelin these days is that they’re desperately trying NOT to be all about expensive, stuffy fine dining, but they can’t lose the old habits and sensibilities, so th...

Re: Los Angeles, CA

You’re right by Thai Town there. The heat was around Luv2Eat (godawful name, great food) pre-pandemic, and I had some awesome stuff there.

Chi Spacca is pretty close, and I think that place is right up your alley. (Also awesome.)

Re: I hate YouTube: A5 Wagyu source locally

Just went down the Wagyu YouTube hole and now I’d like to buy a one pound piece (to cook myself). Where’s the best local source? Hrm... I'm not aware of *anybody* who sells the high-end stuff locally. Except Costco on occasion, oddly enough. But that's more of a weird one- or two-off rather than so...

Re: Costco Kewpie Mayo

There's one detail I'm still not clear about, though: Is Kewpie a specific brand name, or is the term more like "sriracha," a generic name for a product that can be made by many companies? I wouldn’t print it without checking, but I’m pretty sure it’s analogous to Kleenex — a specific bra...

Re: Anything good at Westgate?

Salt was one of the worst restaurants in the city when I was scouting it for a potential review, but that was a very long time ago. (Years.) I would definitely defer to more recent intel. I haven’t been to the Westgate location, but Los Arbolitos de Cajeme is a very respectable midsize (maybe 15 loc...

Re: Bar Cena

This is a pernicious bug that I am trying to fix. Many cameras/phones tag photos with the correct orientation rather than actually rotating the image. phpBB is reading the image, but NOT the tag, so it’s posting the images in the orientation they were actually shot. I thought I had it nipped and pr...

Are the photos correctly oriented before you upload them and somehow getting rotated in the process? This is a pernicious bug that I am trying to fix.
