Well, this place is adorable :-)

Kiss Pollos Estilo Sinaloa has been on my to-do list for... geez, eight years? Longer? And I finally got around to stopping by.

It's just a few blocks south of Downtown Phoenix, but you could drive around inside the loop for the rest of your natural life and never happen upon the place. It's tucked into a little residential neighborhood, across the street from Lowell Elementary.

The thing, as you might suspect, is chicken — chicken minced into tiny, tiny bits and loaded onto tacos, into burros, over tostadas, etc. I went with a couple of the basics, a papa taco topped with cubed fried potatoes and the Kiss taco with shredded Monterey Jack. A couple splashes of house salsa and there you go.

I don't know that I'd call the chicken exceptional, but it's good, and the whole package works because of how meticulously everything is prepared — the sizzle on the tortillas, the knife work on the chicken, the perfect fry on the potatoes... little details that make them just a little special.

I first heard about this place when Patricia Escárcega wrote in the New Times that "the kitchen ascribes to the philosophy of doing one thing, but doing it very well."

I'd actually say it does two things well. As you suggest, those things are chicken and potatoes. The basic tacos with each are impressive, especially when accessorized by a trip to the salsa bar. It's nice to see chicken tacos as something to celebrate on their own terms, rather than just an alternative for those who don't want red meat filling. It should be noted, though, that some of the items also incorporate a bit of pork.

Within the poultry and potatoes theme, the restaurant plays with different formats. The kitchen produces vampiros, which are sort of like a small cheesy tostada, and its own "flip tacos," which are basically mulitas -- a sort of taco sandwich with a crisped tortilla both below and above the fillings.

You can also order the "kiss papas," which is a bowl full of potato, chicken, and cheese with tortillas on the side.
